Possible Causes
Excessive grease buildup, Drip pan missing or overflowing, Foil blocking proper drainage, Cooking fatty meats at very high temperatures
How to Fix / Troubleshooting
Safety first: Do not open the door fully or use water to extinguish a grease fire. Unplug the smoker immediately.
- Smother the fire: Keep the door closed to starve the fire of oxygen. If safe, close the exhaust vent.
- Allow to cool: Once the fire is out and the smoker has cooled completely, remove racks, drip pan, and water pan.
- Deep clean: Scrape and wipe all grease from the bottom, walls, and racks. Clean the drip pan thoroughly and ensure it is properly installed.
- Avoid foil blockage: Do not line the entire bottom with foil in a way that blocks grease flow to the drip pan.
- Adjust cooking method: For very fatty meats, use lower temperatures and ensure the drip pan has capacity to catch rendered fat.
