How to Fix / Troubleshooting
Safety first: Use oven mitts when adjusting vents or pans during a cook.
- Reduce water level: Fill the water pan only halfway or less, especially on long cooks.
- Open vent slightly: Increase exhaust vent opening to allow more steam to escape.
- Use a drip shield: Place a small foil tent or an extra rack above the food to deflect drips.
- Preheat thoroughly: Allow the smoker to preheat fully so interior surfaces are warm before adding food.
