- Inspect for grease buildup: Open the smoker and check for heavy grease on the drip tray, water pan, and bottom pan. Clean thoroughly to prevent overheating.
- Check exhaust and intake: Make sure the top vent and any side vents are open and not blocked by foil, debris, or creosote buildup.
- Reset or test high-limit thermostat: Locate the high-limit thermostat (usually mounted on the back wall or near the heating element). Some models have a manual reset button—press it firmly if present. If there is no reset or it will not reset, test continuity with a multimeter. An open reading at room temperature indicates it must be replaced.
- Verify airflow during operation: After cleaning and reassembly, run the smoker empty at a low temperature and confirm that heat rises gradually and vents are exhausting properly.
