Excessive Airflow or Chip Tray Overheating
Wood chips ignite and burn with open flame instead of smoldering, causing high heat and bitter smoke.

Possible Causes
Chip tray too close to element due to bent support, Exhaust vent fully open causing strong draft, Overfilled chip tray, Using very dry, fine chips
How to Fix / Troubleshooting
Safety first: If flames are present, turn off and unplug the smoker. Keep the door closed to starve the fire of oxygen if safe to do so.
- Reduce chip quantity: Use a smaller amount of chips per load to prevent flare-ups.
- Adjust vent: Partially close the exhaust vent to reduce draft while still allowing smoke to escape.
- Inspect chip tray support: Ensure the tray sits at the correct height above the element. If supports are bent, carefully straighten them so the tray is not touching the element.
- Use larger chips or chunks: Switch to slightly larger pieces that smolder more slowly rather than fine shavings.
