Old Smokey electric smoker overheats and cooks food much hotter than the dial or digital setting indicates.

Safety first: Unplug the smoker immediately if it is overheating. Allow it to cool completely. Overheating can be a fire hazard.

Steps to correct overheating:

• 1. Verify with an external thermometer: Place an oven thermometer inside the smoker and run a short test at a low setting. If the internal temperature far exceeds the set point, the control system is faulty.
• 2. For mechanical thermostat models: Locate the thermostat behind the control knob. Inspect for burnt wiring or signs of arcing. If the element stays on continuously regardless of knob position, the thermostat contacts are likely welded closed and the thermostat must be replaced.
• 3. For digital models: Check the temperature sensor as described in the E2 procedure. A shorted sensor can cause the control to misread temperature. Replace the sensor if readings are incorrect.
• 4. Inspect high-limit thermostat: Ensure any high-limit thermostat is properly mounted to the smoker body and has not been bypassed. Replace if it fails to open at unsafe temperatures.
• 5. Replace faulty control components: Install a new OEM thermostat (mechanical models) or control board/sensor (digital models) if they fail testing.

Warning: Do not continue using the smoker until the overheating issue is resolved. Never bypass safety devices to keep the unit running.
