Possible Causes
Aged temperature sensor with drift, Mis-calibrated control board, Poor sensor mounting or loose screws
How to Fix / Troubleshooting
Safety first: Turn off power before accessing internal components.
- Verify with thermometer: Use an oven-safe thermometer to compare actual cavity temperature with the set temperature over a 20–30 minute period.
- Check sensor mounting: Ensure the sensor probe is firmly attached and not hanging loose inside the cavity.
- Replace sensor: If readings are consistently off by a large margin, replace the oven temperature sensor.
- Calibration (if available): Some Hitachi models allow temperature offset adjustment in the settings menu. Follow the user manual to fine-tune the temperature.
