Safety first: Isolate the oven from mains power before removing any panels.

  • Locate the sensor: Inside the oven cavity, find the small metal probe (usually at the upper rear). This is the temperature sensor.
  • Check wiring: Remove the rear panel or top cover to access the sensor wiring. Ensure the connector is firmly attached to the harness and the control board.
  • Measure resistance: Disconnect the sensor and measure its resistance with a multimeter. Compare with Hitachi specifications (commonly around 1 kΩ at room temperature). An infinite reading indicates an open sensor.
  • Inspect harness: Follow the sensor wires to the control board. Look for cuts, pinched sections, or burnt insulation.
  • Replace sensor: If the sensor is open or out of spec, replace it with the correct Hitachi oven temperature sensor. Secure it with the original screws and reconnect the harness.

After replacement, restore power and test a low-temperature bake cycle to confirm normal operation.
