Safety first: Allow the oven to cool before removing panels or touching internal components. Turn off power if accessing wiring.
Steps to check and correct:
- Verify with thermometer: Place an accurate oven thermometer in the center of the oven and run at 350°F for 20–30 minutes. Note the average reading.
- Adjust control offset: Many Viking controls allow a temperature offset adjustment in the user settings. Refer to your manual to increase or decrease the displayed temperature to match the actual reading.
- Inspect door gasket: Check the oven door gasket for tears, gaps, or flattening. Replace if it does not seal evenly all around.
- Check sensor: If calibration cannot correct the issue, test the oven temperature sensor resistance at room temperature and replace if out of spec.
When to call a technician: If large temperature swings persist after calibration and sensor replacement, the control board may be faulty and should be evaluated by a professional.
