Safety first: Use heat-resistant gloves when placing or removing thermometers from the oven.
Steps:
- Verify with thermometer: Place an accurate oven thermometer in the center of the oven. Preheat to 350°F and allow 20–30 minutes to stabilize. Compare actual temperature to the setpoint.
- Adjust calibration: Many Sub-Zero/Wolf ranges allow temperature offset adjustment in the user settings. Follow the manual to increase or decrease the displayed temperature to match actual readings.
- Check sensor: If the offset required is more than ±35°F, test the oven temperature sensor resistance and replace if out of specification.
- Ensure proper airflow: Avoid blocking convection fans or vents with large pans or foil, which can cause uneven heating.
